20/11/25 (Agence Europe) – On Thursday 20 November, the European Commission announced the registration of ‘Boudin blanc de Liège’ (Belgium) in the Community register of protected geographical indications (PGIs). This white pudding is made from lean meat and pig fat, flavoured with whole dried marjoram leaves, then stuffed into natural casings. It is traditionally eaten cold, sliced. Marjoram, a defining ingredient, is part of the cultural identity of the people of the province of Liège, and is used to flavour a number of local dishes, including Liège-style crayfish, calf’s head and meatloaf.
