21/12/23 (Agence Europe) – On Tuesday 19 December, the European Commission approved the inclusion in the Community register of protected geographical indications (PGI) of ‘Formatge Garrotxa / Queso Garrotxa’, a cheese from Catalonia made exclusively from whole goat’s milk. During the cheese-making process, the ripening and growth of the fungi are decisive stages that give the cheese its special characteristics. The cheeses are turned several times until they have a homogeneous grey rind with an ashy, cottony appearance. As the fungus grows, the cheesemaker brushes the rind by hand, taking care not to remove the fungus. The minimum maturing period is 21 days. (LC)
