17/03/2023 (Agence Europe) – The European Commission announced, on Thursday 16 March, that it has approved the registration as a Traditional Speciality Guaranteed (TSG) of ‘Суджук Търновски/Sudzhuk Tarnovski’’/Търновски Суджук/Tarnovski Sudzhuk’ from Bulgaria. This is a traditional Bulgarian long-life product made from dried raw meat. The preparation consists of fresh minced meat and natural spices. The product has been produced for over 50 years using an original technology that consists in sorting the meat appropriately, selecting and dosing the spices and giving the different pieces the shape of a horseshoe. This new designation is added to the list of 63 traditional specialities guaranteed already protected at EU level. (LC)
